Better yet it’s gluten free, grain free, dairy free and sugar free so it’s a great alternative and fits into Paleo lifestyle! - All ingredients in TM or food processor. If you use hand beaters ensure that your walnuts are ground or finely chopped. Mix util well combined.
- Pour mixture into a greased or lined tin (I used a square 20cmx20cm) If you want the cake to be taller use a small pan. The cake will triple in size through cooking, so while it looks like “yikes this is a tiny cake” it will end up perfect.
- Cook for 25-30mins or until skewer inserted into the centre comes out clean.
- Serve as desired. I found a cool avocado based frosting and added some coffee then sprinkled walnuts.
