Quick and Easy Coconut Bread – Gluten Free
Coconut Bread …… 6 Ingredients, one bowl, egg free, gluten free, refined sugar free, grain free, dairy free, yeast free, low fodmap, low salicyate, paleo and tastes absolutely sensational!!!!!!
3/4 teaspoon bi-carb soda
1/2 cup coconut sugar
1/4 cup desiccated coconut
3/4 cup coconut milk
1 ripe banana (Cavendish for more banana taste, Lady Finger for less banana taste)
- Preheat oven to 160C. Line or grease a 20x10cm bread tin.
- In a bowl or TM combine all ingredients until well mixed. Mixture with slightly lighten in colour once well combined.
- Pour into bread tin and bake for 35-40 minutes or until skewer inserted into center comes out clean.
- Allow to cool then enjoy!
Note: You can add approx 200gr of dried fruit or nuts for an extra dimension.
