Apricot and Coconut Dark Chocolate Cookies
These scrumptious little morsels can be enjoyed anytime of the day and seriously take healthy snacking to a whole new level! Gluten, grain, dairy, refined sugar free – the perfect paleo treat!
2/3 cup green banana flour – Natural Evolution Ultimate Gluten Free Baking Flour
1/2 cup diced dried apricots
1 cup desiccated coconut
1/2 cup walnuts roughly chopped
1/2 cup dark choc bits
1 cup flaked almonds
1/2 cup coconut sugar
125g coconut oil
2 eggs (lightly whisked)
1 teaspoon vanilla essence
- Preheat oven to 160C.
- In a large bowl combine all ingredients. If using a TM ensure to use the backspin function and no higher than speed 3.
- With wet hands roll teaspoon sized balls and gently press with fork to flatten.
- Bake in oven for 25-30 mins or until crunchy/as desired.
