- Preheat oven to 180C
- If using a TM or food processor put all ingredients into bowl.
- Combine all ingredients well, starting off slow (speed 4, 20 seconds) gradually increasing (speed 8, 1min 30 sec).
- Mixture will become noticeably lighter in colour and should be able to pour well.Note: If using a different mixer combine all wet ingredients including bananas and dates and mix until smooth consistency, gradually add dry ingredients and mix until batter become lighter in colour.
- Pour mixture into a lined bread tin.
- Thickly spread walnuts and sprinkle with coconut sugar over the top of the mixture, gently press into the top of the mixture.
- Bake in oven for approx. 40 minutes or until mixture doesn’t stick to knife or skewer
- Remove from oven, cool, slice and enjoy.
