
This recipe is so easy you can get your kids to make it for you and it’s dairy free, gluten free, grain free and refined sugar free and DOES NOT taste like any of the above! It was soooo yummy!
I adapted this recipe from Mt Uncles Banana Flour’s 5 minute cake! This amazing company make a gluten free flour in Northern Qld from bananas! So a grain free flour! YAY!
A bit about this flour – Gluten free, Resitant Starch, 100% Natural, NO additives or preservatives. RICH source of magnesium and potassium. 68% resistance starch per serving. Use in all your favourite recipes. Use 25% less flour when using Mt Uncle’s Banana Flour in your normal recipes – How cool does that sound?
Ingredients
- 1 1/2 cup Mt Uncles Banana Flour
- 1 heaped teaspoon of bi-carb soda
- 3 tablespoons cacao
- 1/2 punnet of blueberries
- 1/2 punnet of raspberries
- 1/2 cup of coconut sugar
- 3 tablespoons of desiccated coconut
- 1 cup of rice, almond or coconut milk (I used rice)
- 125gr of coconut oil
- 2 eggs
Methodbreak eggs into mixing bowl bowl and beat lightly
add the rest of the ingredients except berries (make sure the coconut oil has been liquefied on the stove)
Stir very well
Add berries and stir lightly just to mix them through the batter
Pour into a cake tin or muffin tray and bake at 180 degrees for about 20 mins (probably longer if in a cake tin)
Allow to cool on rack and then eatOR
arrange on plate and have some fun decorating!Now the following icing recipe has no exact measurements – I played around with 3 ingredients and it turned out really well but I added a bit of this one and a bit of that one and a bit of this one (and repeated) until I got the consistency I wanted – you might want a more ‘icing – like’ consistency but i was going for a ‘glue’ to stick my leftover berries on.
Icing
rice malt syrup
coconut oil
cacao powder
Start with the rice malt syrup (say about 3 tblspns) it is stringy and tacky – a perfect ‘glue’ so just add the cacao and coconut oil and more of the syrup if you have to, to get the right ratio – you will get it and have fun playing! Then smear some on top of the cake or mini cakes and ‘glue’ on your berries!

Thought I would include a collage of the fun and mess we enjoyed today – Arwen, my 2 year old was the real cook here (I only decorated) Sam, my one year old supervised, we left the dishes in the sink all day and we all got chocolate cake around our mouths -fun was had by all!
