My goodness I love pancakes – they’re such a comfort food for me. As a child my topping of choice was a mixture of lemon and sugar and while I still love that combination, for something a little more decadent these grilled nectarines with coconut caramel make it all so outrageously good.
When you are making the caramel, if the sugar mixture freezes up when you add the creams don’t despair! Keep the pan on the heat and keep stirring, the hardened toffee should re-melt into the cream mixture and then eventually turn into the love gooey caramel that you’re looking for. If you don’t have a griddle pan don’t be too concerned, you can easily cook the nectarines in the same fry pan as the pancakes.
Banana flour is versatile gluten free flour which bakes well.
Serves 4Ingredients
PANCAKES:
120 g banana flour
2 tsp castor sugar
good pinch salt
1/2 tsp baking powder, sifted
250 ml milk
2 eggs, separated
Coconut oil, for greasing
GRILLED NECTARINES:4 Nectarines
Coconut oil, for brushing
COCONUT CARAMEL:110 gm castor sugar
120 ml pouring cream
120 ml coconut cream
InstructionsFor coconut caramel, combine the sugar and 120 ml of water in a medium saucepan. You will need a bigger pan than you think as you will soon find out. Swirl the pan a few times to dissolve some of the sugar and then stop. Put the heat up to high and let the mixture boil without stirring it. While it is boiling, place the two creams in a microwave proof jug and place in the microwave, ready to go. After between 7 – 10 minutes, depending on the heat level, the sugar mixture will begin to turn a caramel colour. As soon as the colour changes on the edges, warm the cream mixture in a microwave for 30 seconds. You don’t want to get it hot, just warmed. Once the caramel colour has spread so that nearly all the liquid in the saucepan is golden (it happens quite quickly), pour in the warmed cream mixture, stirring all the time. The mixture will ferociously boil (hence the large pan) and then eventually calm down, keep it on the heat but this time stirring all the time. The mixture will start of quite light in colour before slowly turning into a deep golden caramel (approx 3-5 min). Remove from the heat and set aside to cool and thicken a little while you get on with making the pancakes.
Pre-heat oven to a low setting.
For pancakes, combine flour, sugar, salt and baking powder in a small bowl. In a separate bowl, whisk egg whites to a medium peak with electric beaters. In a small bowl combine the milk and egg yolks together with a folk. To the egg white mixture, add the milk and flour mixtures then gently fold through to combine.
Heat a large non-stick frying pan on a medium heat and add a little coconut oil to the pan. Once hot, use a soup ladle to pour pancake batter into pan (roughly 10 cm circles) and cook pancakes, a few minutes on each side. Repeat with remaining batter, adding more coconut oil when necessary and keeping the cooked pancakes in the oven so they stay warm.
Once you are up to your last batch of pancakes, heat a griddle pan on high and brush the nectarine slices with coconut oil. Once the pan is hot, sear the nectarine slices on both sides to grill them.
Serve the pancakes with the grilled nectarine and slightly cooled coconut caramel.
